More about today’s guest: Valerio Di Mauro is owner of Colle Picchioni, a traditional winery in Lazio, begun in 1976 when it was founded by his grandmother, Paola Di Mauro. Having started studying law, he chose a career in winemaking, bringing innovation and imagination to the family property. Today, he manages the winery and winemaking, taking care that each bottle conveys Castelli Romani volcanic terroir in a new and individualistic manner. Continuing with traditional methods, but with new experiments, such as producing a Metodo Classico spumante with a re-emerged variety, Giulia, he remains committed to both narrative and sustainability, working to transmit Colle Picchioni's soul to Italian and international wine drinkers alike.
