 Cibo estremo, al limite della legalità. La cicala di mare (Squilla mantis), in alcune zone chiamata canocchia o pannocchia, è un crostaceo meno costoso dei gamberi ma decisamente molto goloso. Perché mi piace così tanto tuffarle vive in pentola? Primo, perché Dio lo vuole. Genesi 9, 2: "Il terrore di voi sia su tutti gli animali". Il secondo motivo è perché la vitalità è la sola garanzia di freschezza.
