Growing up near the woods of Colorado with parents who hunt, I learned at a young age how removing moisture can make Food last longer and concentrate flavor.
Dehydration is both a culinary technique and a way to preserve. Dehydration allows us to forage for crops or animals in season and eat them in the off-season. It also allows us to buy bargain items in bulk and make them last for a long time.With today's price inflation, it simply makes sense for us to stretch out our Food. Reducing food waste allows people to squeeze out all of the benefits from our resources and put them to good use.
These are hard times that we face. We must keep sustainability in mind to tide us over this period. I know that not all people can hunt or establish a farm to feed themselves. However, we can add dehydration techniques to our repertoire and apply them to the Food that we buy from the market. This will allow us to survive more price inflation and the times when we can't get or buy Food. It's also a good time-saver since Food can be bought in advance and stored until needed—days, weeks, or months later. You can even portion it into the amounts needed so that you won't need to take out too much and risk spoilage.I know there are plenty of books out there talking about how to dehydrate Food in general, but I noticed most books do not get into the details on how to actually go through each of the steps, and that is the very reason I wanted to write this book.
Growing up, we did what we had to do to survive, so it was never a hobby or luxury for us; it was a necessity. We had to learn how to preserve Food the proper way; if not, we would go hungry.
