Osechiryori is the food that everyone eats during oshogatsu in Japan. 日本でのお正月に欠かせない料理が、おせち料理です。
おせち料理には縁起の良い食べ物がもりだくさん。たとえば、子孫繁栄を願う数の子や、おめでたい色の紅白のかまぼこなどです。
おめでたいことが重なりますようにとの願いを込めて重箱に詰めます。
おせち料理は、お正月に女性が料理をしなくてもいいよう、生ものは使わず、日持ちのするものを詰めるのが基本。
そのため、冷めてもおいしいように濃い目の味付けにします。
おせち料理が現在の姿になったのは明治時代で、「おせち料理」の名前で呼ばれるようになったのは、戦後にデパートで販売するようになってからといわれています。©2017 KODANSHA
