Sashimi is raw seafood served in thin slices. It is also called otsukuri. 刺身とは生の魚貝を薄くスライスしたもので、お造りとも呼ばれます。
醬油をつけて食べますが、寿司とは別の食べ物です。
和食では素材の味をいかすため、新鮮な材料をそのまま調理することが多いのですが、その代表格が刺身です。
海に囲まれた島国の日本では古くから生の魚を食べる風習があり、昔は「なます」と呼ばれていましたが、室町時代に刺身と呼ばれるようになったといわれています。
調理法は生の魚を切るだけですが、これがなかなか難しく、きれいに切るため、専用の刺身包丁もあるほどです。
一般に、刺身といえば魚貝がイメージされますが、馬や鶏の肉を生で食べる馬刺しや鶏刺しなども知られています。©2017 KODANSHA
