In Kyoto, everyday side dishes made from on-hand ingredients are called "obanzai". 京都では、ありあわせの食材で作った日常のおかずのことを「おばんざい」と呼びます。
おばんざいは、関東地方の惣菜にあたります。
京都の内陸では昔から魚介類が少なく、乾物や干物しか手に入りませんでした。
そこで、豆腐などの大豆製品や日持ちする乾物、賀茂茄子や壬生菜、聖護院大根などの京野菜を使って、毎日の料理を作ったのです。
おばんざいは、かつお節や昆布、干し椎茸などのだしがきいた煮物が多く、基本的には薄味です。
また、色の濃い調味料はあまり使わないことから素材の色みの鮮やかさを味わうことができます。
伝統的な家庭料理として受け継がれていると同時に、いまでは京都以外にもおばんざいを提供する料理屋が増えています。
